Baked Oatmeal with Date Honey

Made ahead of time, this can be a quick, easy and tasty breakfast or mid afternoon snack. This is from one of my favorite recipe books Forks Over Knives.
Yield 2 Servings (Feel free to multiply the recipe)

  • 1 & 1/2 cups old-fashioned oatmeal
  • 1 & 1/2 cups unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup chopped dried apricots
  • 1/4 cup chopped dates (or raisins..which is what I used)
  • 1/4 cup chopped walnuts
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

1. Preheat oven to 350

2. Put all ingredients in a large bowl and stir well.

3. Transfer to 8×8 baking dish that has been lightly rubbed with olive oil.

4. Bake 45-50 mins or until slightly browned on top.

 


 

Date Honey (Yield 12 Servings – Refrigerate Extra) – Serving Size: 1 Tbsp

  • 1 cup pitted dates (about 18-20)
  • 1 cup water
  • 1/2 tsp cinnamon

Instructions

1. Pour dates and water in small saucepan, making sure dates are covered with water (add additional water if needed).

2. Bring to a boil over high heat, Reduce heat to low and simmer for 45 mins.

3. Remove from heat and allow to cool for about 15 mins.

4. Pour mixture into blender or food processor and puree until smooth.

5. Sprinkle in cinnamon and stir well. Refrigerate before serving.
